Now March, then April...2012 is well on it's way. Is it wrong that I still have poinsettia plants displayed in my house? Don't say it, I know the answer. Yes, it's not right. Sadly, their time has come and gone. sigh On the upside, this means it will soon be time for fresh cut flowers from my garden. Not real soon, but soon enough.

This year is off and running at a fast pace. The next round of holidays are also approaching...Easter, then Mother's Day, then Graduations then Father's Day and then....

Whew!

Outdoor markets are approaching quite swiftly as well. Let's pray for a mild, non-stormy season - at least for Saturday mornings - that's all we ask, at least for now...wink wink.

Brian and I recently attended the Illinois Products Expo in Springfield. We were humbled by the wonderful crowd and excitement surrounding our artisan collection. So many of our products sold out over the two day show. A BIG thank you to all who came out to see us!

At the expo, many MANY consumers asked if we were in local area stores. We are working hard to bring your faves to your local marketplaces. If you know of a store that you feel would be a good fit for our products, we encourage you to mention JAVA & Co. to the store management. Retailers tend to be more receptive to their customer recommendations versus a company trying to 'sell' them something. Customer recommendations DO work!

A favorite recipe for the holidays. With Easter approaching, we'd like to share this with you again.

JAVA GLAZED SPICED HAM ~ rich, candied & savory!

Ingredients:
2 tsp JAVA Spice – Meat & Seafood Rub
5 oz JAVA French Vanilla Syrup
6 to 8 lb. Ham with bone in
1 cup Water

Directions:
1. Preheat roaster to 450º.

2. Using a sharp knife, make 1/4-inch-deep slashes in the ham in a criss-cross pattern making 1 inch squares. Rub the spice rub over the ham and into the slashes and let stand for 5 minutes.
3. Place ham on rack in roaster flat side down. Pour 1 cup of water in the bottom of the roaster. Roast at 450º for 30 minutes.
4. Reduce heat to 275º and baste (brush with a pastry brush) ham with JAVA syrup. Reserve extra syrup.
5. Continue basting ham with syrup every 20 to 30 minutes until ham reaches an internal temperature of 160º.

6. Note: Once you run out of extra syrup, baste ham from syrup and juices in the bottom of the roaster.
7. When ham reaches an internal temperature of 160º(according to meat thermometer), then remove from heat. Let rest for 10 minutes. Slice and enjoy!
